Recipe:
Crustless Spinach & Cheese Quiche
butter-flavored cooking spray
¾ cup chopped fresh white mushrooms
¼ cup chopped shallots
two 10-ounce packages frozen chopped spinach
1 tablespoon water
¼ cup egg substitute
½ cup skim milk
½ cup diced low-fat Swiss cheese
¼ teaspoon ground nutmeg
• Coat the inside of a microwaveable casserole dish with cooking spray. Add mushrooms and shallots, cover dish, and microwave on high for 1 minute.
• Place frozen spinach and water on top of mushroom mixture. Cover and microwave on high for 3½ minutes.
• Flip spinach, break it up, recover dish, and microwave on high for another 3½ minutes.
Remove from microwave and drain excess liquid.
• In a separate bowl, combine egg substitute and milk. Stir in cheese and nutmeg.
• Stir spinach mixture gently to combine, then pour egg mixture on top, cover, and microwave on high for 4 minutes.
Amount per Serving: Calories: 143; Protein: 15.5 grams; Fat: 4.16 grams; Carbohydrates: 10.02 grams; Sodium: 221.07 milligrams

Today I walk with my head held high. As a nurse I knew the health risk associated with obesity, but I had no idea how much of a difference weig ht loss surgery could make.
Similar to many other people walking this path, I tried every diet that came along and any medication that might help. Some did help for a while but only to yo-yo my weight.
I avoided family photos. When walking I would always look down in case there was an uneven surface, to avoid an embarrassing fall, as I was prone to do. I avoided sitting in a booth in a restaurant because I might not fit. I avoided stairs and hated social occasions because of my weight.
That was me then. Today this has all changed, thanks to Southern Oregon Bariatric Center.
I had only dreamed what it would be like to have gastric bypass surgery, like many after the publicity of Carnie Wilson’s surgery. That dream became a reality for me on November 9, 2004. That was also the day I became reborn, so to speak. I was home in two days and back at work in one week.
Since then I have lost 120 pounds. I feel absolutely fabulous! I walk with ease and a spring in my step. I can cross my legs (I know this is silly, but not if you’ve never been able to). A smile is always on my face. I go to the gym three days per week. I now can shop in the same departments as my daughters. I have gone from a size 3x/26 to a size 14 so far. I now gladly get rid of clothes that are getting too big, without the fear of gaining back the weight as in the past.
I now have the tools to continue to be a success, knowing that it takes diet, exercise, an understanding of behavior, and regular attendance at a support group. This particular program with Southern Oregon Bariatric Center provides all that and more. The help of their coordinator, dietician, personal trainer, physical therapist, and social worker and the talent of the physicians are what set this program apart.
Addiction

Have you ever felt that your desire for food was out of control, or you couldn’t stop eating once you started, or your food cravings dictated your actions, including hiding food or eating in secret? If this sounds familiar, you may be struggling with what has been termed “food addiction.” Were you hoping that gastric banding or gastric bypass surgery would cure your psycho-emotional dependence on food but have now found that this is not the case?
If so, you are not alone. Gastric banding and gastric bypass surgery are physiological procedures that change your anatomy. Most of the time, these anatomical changes support behavioral changes by providing you with negative feedback, such as dumping syndrome from eating sweets or pouch pressure from overeating. But these negative symptoms are not guaranteed to occur and can be tricked if someone is determined to misbehave.
Given the facts that food addiction is common and that weight-loss surgery can help but does not cure eating behaviors, there are three important steps you can take:
- Recognize your particular issues or weaknesses about food.
- Create a healthy action plan to help you the next time you are in a vulnerable situation where food has usually been your coping method.
- Get support! Tell someone whom you trust about the situations that make you vulnerable and what you plan to do going forward. Ask them to help you in a way that is supportive and empowering. Just by asking you are on your way!
